May Meal Plan

This month my family is trying to eat less flour and sugar, so you’ll see a lot less pasta and recipes with bread on here. And I don’t know about where you live, but here in Arizona it is starting to get HOT, so I included several recipes for the slow cooker and the grill so you don’t have to heat up your kitchen. (You can use your oven if you really want.)

 It’s late. Again. Sorry guys! Life happens and it seems like it goes in spurts of 2 weeks super stressful, 2 weeks calm. And for some reason I never think to get ahead during the calm period. Maybe I’ll try that this time around 🙂

So that is what I did. This past week when demands have been high, I’ve tried to slow down and see what matters most. It works wonders.

March Shopping List

  • 4 hamburger buns, split (I just use bread. It’s cheaper and I always have some on hand)
  • Eggs 5
  • bread, 12 slices of good quality
  • Caesar dressing about ¾ cup
  • chicken bouillon 8 tsp.
  • chicken broth 4 cans (or substitute chicken bouillon)
  • corn tortillas, 12
  • dried split peas, 1 lb
  • French bread 1 loaf
  • Garlic-herb croutons
  • Land O Lakes® Garlic & Herb Sauté Express® square 1(This is a roll-over ingredient from a couple of months ago)
  • Optional –  Almonds ¼ cup slivered
  • Pasta – 3 cups Penne Pasta
  • Pasta – 8 oz, Egg Noodles
  • pie shell (or make your own crust!) 1 9-inch
  • pizza dough  1 can or make your own
  • pizza sauce 1/2 to 3/4 cup (or make your own)

Canned Items

  • cream of chicken soup 2 cans
  • Diced Tomatoes and Green Chiles 3 (10-oz) cans
  • evaporated fat-free milk (1½ cups) One 12- oz can
  • red enchilada sauce 1 10-ounce can
  • Tomato Sauce 1 can 15-oz, 1 8 oz can

  • ham 2 lb. (perfect for left over ham!)
  • ground beef (at least 90% lean) – 2.25 pound
  • chicken breasts 17
  • ground round steak 2 lbs
  • Pepperoni – 4 oz
  • bacon, 6 slices

Produce

  • avocado, ½ (optional)
  • baby spinach leaves ½ cup
  • broccoli florets 11 ½ cups (fresh or frozen. Frozen lasts better throughout the month)
  • carrots 4 medium
  • chives 1 tsp or use onion powder
  • chopped cilantro (optional)
  • garlic, 10 cloves
  • Green Onions OR Onion Powder

  • Mashed Potatoes (your choice, real or instant)

It has been a crazy month! It was my husband’s birthday, my toddler’s 3rd birthday, and my baby started crawling!! That same cute baby hasn’t been sleeping well at all and on average I’m up with him 3 times a night (sometimes 6!). I’m kind of going nuts.  My caramel business that I run with my mom has been booming! If you’re a caramel lover you’ve got to try some 🙂 I also have been taking piano lessons again as something for ME to help keep my sanity but try to fit in 1.5 hours of practicing a day…uh… sorry Jedda! It hasn’t been happening as much as it should! And then of course there is this blog!

Sorry this one was a little late. I got hit with the stomach flu and food was the last thing I wanted to think about! Remember that on Saturday you’ll find an additional meal in red in case you have a bigger family and don’t have as many leftovers as we do. These meals have their own shopping list at the bottom of the regular shopping list. Welcome to all of my new followers! I hope you find this blog useful. Take a look at the FAQ to get a better idea of how to use this. We didn’t hit the 100 followers mark but I know we can this month because we’re not too far away! Happy New Year!!!!

This month, let’s have some more participation from you wonderful people. If you try a recipe and like it, come back and like it on the blog! Also I’ve made a change on the calendar! For those of you who have bigger families and don’t have enough leftovers to do 2 additional dinners, I’ve added an optional 5th meal to the week. You’ll find these on Saturday and marked with an *. The shopping list for these additional meals can be found at the bottom of the regular list.  I won’t be making these as part of my meal plan so they aren’t included in my $100 a month budget.  But in case you need them, here they are!

Have you noticed that New Years just isn’t that great when you have children? Where we live, once the clock hits midnight, people are out doing fireworks, shooting guns, yelling, and banging on pots. I have 2 little kids that go to bed at 8:30 and all of the racket wakes them up. Ya. So NOT cool. Just once, I’d love to retaliate by waking up at 6 AM and going outside banging on my pots and yelling “Happy New Year!!” Just to see how they like it. I mean, it’s just as much a new year at 6:00 in the morning as it is at midnight, right? 😉 Anywho, now that you all know that I’m the grinch of New Years celebrations, let’s move on…

What an amazing year! We were so blessed (especially to have such a healthy, happy new baby!) and I can’t wait to see what 2014 brings.  One big thing for this year is that my husband will graduate with his master’s degree. (Only 131 more days! You can do it, Honey!!!)
