Black Bean Burgers

I got this recipe from a lady who goes to my church… I hear it’s really good! I can’t wait to try it.

BLACK BEAN BURGERS

  • 1 can black beans, rinsed & drained
  • 1/2 cup cooked quinoa
  • 1/4 cup minced celery (recipe called for minced bell pepper)
  • 2 T dried minced onion
  • 2 cloves garlic
  • 1 cup oats, ran thru blender
  • 1 tsp cumin
  • 1 T ketchup
  • 2 T soy sauce (I used lite)
  • 2 T Dijon mustard
  • 1 egg

Mash beans with a fork while leaving a few whole beans in a paste like mixture. Mix remaining ingredients and form into patties (about 5-6) Cook in a few Tablespoons of olive oil, about 3 minutes per side. You might want to add a little salt & pepper your taste.
